The question is: during the execution of the middle back piercing kick do I have to look in the kick direction or in the opposite side? Is it the same also for moon-moo and kodang? Thank you

Luigi

You should always look in the direction of the kick!

on a back kick keep your shoulders parallel to the floor and look over the shoulder on the side where you execute the kick.

Don't turn your shoulder because then you will have a position as for a side kick.

Learning is a process which never ends and where you have to be afraid to forget what you have learned.
